Ingredients

peeled plum tomatoes from a can
crushed

cajun seasoning

hot sauce
to taste

peeled and deveined shrimp

cooked ecoLife© Quick Cook Brown Basmati Rice
Instructions
Heat butter in a medium dutch oven over medium heat.
Add flour and cook into the butter for 3 to 4 minutes until the flour browns slightly.
Add peppers, onions, and celery. Cook for 6 minutes until softened.
Add in tomatoes, broth, parsley, cajun seasoning, paprika, salt and hot sauce. Bring the stew to a boil and reduce heat to simmer.
Cook at a simmer for 30 minutes.
Add in shrimp and cook an additional 4 minutes or so.
Serve stew over ecoLife Quick Cook Brown Basmati Rice and garnish with additional parsley.
