Instructions
  1. In a large pot, sauté onions, peppers, celery, and garlic until vegetables are soft.
  2. Add remaining ingredients except parsley and vegetable stock. Mix well and cook 4 minutes to develop flavors.
  3. Add vegetable stock, salt and pepper, and bring to a boil.
  4. Cover and reduce heat to a simmer for 20-25 minutes. Grains should be plump and tender, but still al dente. Adjust salt, pepper to your taste.
  5. Before serving, discard bay leaves. Top with chopped parsley, and enjoy!
