Ingredients

ecoLife® Freekeh

water

large cucumber
diced

cup
kalamata olives
pitted
½
cup
feta
crumbled

pint
cherry tomatoes
sliced

red onion
thinly sliced

tablespoons
olive oil

tablespoon
red vinegar
½
tablespoon
oregano
dried
Salt and pepper
to taste
Instructions
In a saucepan, combine freekeh and water. Bring to a boil, reduce heat and cover. Simmer 15-20 minutes or until tender. Remove from heat and let cool.
In a large mixing bowl, toss all ingredients until well combined. Salt and pepper to taste. Serve chilled.
