Instructions
  1. In a medium bowl, combine all the ingredients for the chickpea mix and set aside.
  2. Make the tahini dressing by whisking together all the ingredients. Add more water to thin the dressing to desired consistency. Season to taste with salt and pepper.
  3. Assemble bowls by dividing ecoLife Quick Cook Brown Rice, spinach leaves, cucumber, chickpeas, red onion, cherry tomatoes and feta among bowls.
  4. Drizzle with dressing and serve.
