Instructions
  1. Preheat oven to 425.
  2. Place carrots, squash, and shallots on a sheet pan with a few tablespoons of oil, salt, and pepper. Roast 25-30 minutes.
  3. Heat stock in a saucepan until boiling. Add kamut and simmer covered for 30 minutes. Drain.
  4. Mix all the ingredients for the dressing together. When vegetables are done, toss with kamut, dressing, and arugula. Serve garnished with pumpkin seeds.
