  1. In a medium saucepan, bring water to a boil. Stir in rice and olive oil. Cover and reduce heat to a simmer, about 20 minutes. Remove from heat and let stand 5 minutes. Fluff with a fork and let cool completely.
  2. In a mixing bowl, combine remaining ingredients. Fold in rice and let chill for 10-15 minutes. Serve with warm pita.
