ecoLife® Organic Kamut and Vegetable Frittata
  1. Bring ecoLife® kamut and water to a boil in a saucepan. Reduce heat, cover, and simmer until the kamut is tender, about 30 minutes.
  2. Combine the eggs, cheeses, pepper and salt. Whisk until combined. In an oven safe skillet or cast iron pan, add the butter and heat until melted over medium high heat. Add the zucchini, peas, and parsley and sauté until soft. Add the egg and cheese mixture and cook until the bottom is slightly firm.
  3. Transfer the pan to the oven and bake for 20-30 minutes or until the center is firm and the edges are light gold.
  4. Allow to cool at least 5 minutes in the pan before serving. Turn upside down if desired. Serve hot or at room temperature.
