  1. In a large pot, heat olive oil over medium high. Once hot, add onion, celery, bell pepper and garlic. Cook until vegetables become tender. About 5 minutes.
  2. Add garlic, chili powder, cumin, salt, paprika and beef. Stir occasionally and cook until beef browns. About 10 minutes.
  3. Fold in lentils, corn, tomatoes and beans. Add water and simmer on high for 10 minutes. Serve with jalapeños and sour cream.
