  1. In a saucepan, bring water and quinoa to a boil. Reduce heat and simmer 12 minutes or until water is absorbed. Remove from heat and let rest covered for 5 minutes. Fluff with fork and let cool.
  2. In a small bowl, combine ingredients. Toss with favorite dressing and serve immediately.
