Ingredients
- 1 cup ecoLife® Brown Basmati Rice
- 2 cups water
- 1 tablespoon olive oil
- ¾ cup cucumbers diced
- ¾ cup tomatoes diced
- ¼ parsley chopped
- 4 tablespoons mint chopped
- 3 tablespoons lemon juice
- Salt to taste

Instructions
- In a medium saucepan, bring water to a boil. Stir in rice and olive oil. Cover and reduce heat to a simmer, about 20 minutes. Remove from heat and let stand 5 minutes. Fluff with a fork and let cool completely.
- In a mixing bowl, combine remaining ingredients. Fold in rice and let chill for 10-15 minutes. Serve with warm pita.
