Ingredients
- 1 stick unsalted butter
- 1 tablespoon all-purpose flour
- 2 inch bell peppers cut into ¼" thick slices
- 1 inch onion cut into ¼" thick half moons
- 2 inch celery stalks cut into ½ pieces
- 6 peeled plum tomatoes from a can crushed
- 1½ cups chicken stock
- 1 tablespoon parsley chopped
- 2 teaspoons cajun seasoning
- 1 teaspoon paprika
- 1/2 teaspoon salt
- hot sauce to taste
- 1 pound peeled and deveined shrimp
- 1 cup cooked ecoLife© Quick Cook Brown Basmati Rice

Instructions
- Heat butter in a medium dutch oven over medium heat.
- Add flour and cook into the butter for 3 to 4 minutes until the flour browns slightly.
- Add peppers, onions, and celery. Cook for 6 minutes until softened.
- Add in tomatoes, broth, parsley, cajun seasoning, paprika, salt and hot sauce. Bring the stew to a boil and reduce heat to simmer.
- Cook at a simmer for 30 minutes.
- Add in shrimp and cook an additional 4 minutes or so.
- Serve stew over ecoLife Quick Cook Brown Basmati Rice and garnish with additional parsley.
