Ingredients
- 1 cup ecoLife® Freekeh
- ½ cup ecoLife® Kamut®
- 4 cups vegetable stock
- 1 tbsp cooking oil
- 1 cup chopped onion
- 1 cup chopped green bell pepper
- 1 cup chopped celery
- 1 tbsp minced garlic
- 2 ea bay leaves
- 2 cups diced tomatoes
- 1 cup diced zucchini
- 1 cup diced carrots
- 2 tbsp fresh thyme
- 2 tbsp fresh oregano
- 1 tbsp smoked paprika
- ½ tsp cayenne pepper
- ¼ cup fresh parsley chopped

Instructions
- In a large pot, sauté onions, peppers, celery, and garlic until vegetables are soft.
- Add remaining ingredients except parsley and vegetable stock. Mix well and cook 4 minutes to develop flavors.
- Add vegetable stock, salt and pepper, and bring to a boil.
- Cover and reduce heat to a simmer for 20-25 minutes. Grains should be plump and tender, but still al dente. Adjust salt, pepper to your taste.
- Before serving, discard bay leaves. Top with chopped parsley, and enjoy!
