- 1/2 cup fresh parsley

Instructions
- Cook Brown Basmati Rice according to package instructions and set aside
- Preheat oven to 425 degrees.
- Arrange veggies on sheet tray and toss with olive oil, salt, and pepper. Roast for 18 minutes.
- To make dressing, put all ingredients in a food processor and thin with water, about 4-5 tablespoons, to reach a dressing consistency. Season with salt and pepper.
- Serve bowls by topping brown rice with roasted vegetables, dressing, and a sprinkle of parsley.
