Fall Veggie Bowl with Green Tahini Sauce
  1. Cook Brown Basmati Rice according to package instructions and set aside
  2. Preheat oven to 425 degrees.
  3. Arrange veggies on sheet tray and toss with olive oil, salt, and pepper. Roast for 18 minutes.
  4. To make dressing, put all ingredients in a food processor and thin with water, about 4-5 tablespoons, to reach a dressing consistency. Season with salt and pepper.
  5. Serve bowls by topping brown rice with roasted vegetables, dressing, and a sprinkle of parsley.
