Ingredients
- 1 cup ecoLife® Freekeh
- 2½ cups water
- 1 large cucumber diced
- 1 cup kalamata olives pitted
- ½ cup feta crumbled
- 1 pint cherry tomatoes sliced
- ¼ red onion thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon red vinegar
- ½ tablespoon oregano dried
- Salt and pepper to taste

Instructions
- In a saucepan, combine freekeh and water. Bring to a boil, reduce heat and cover. Simmer 15-20 minutes or until tender. Remove from heat and let cool.
- In a large mixing bowl, toss all ingredients until well combined. Salt and pepper to taste. Serve chilled.
