- 2 cups ecoLife Basmati Rice
- 2 teaspoons grated fresh ginger
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- Seeds from one large pomegranate
- ⅔ cup toasted pistachios coarsely chopped
- 12 dates corals chopped
- 1 cup chopped fresh dill
- Salt and pepper to taste
- Cook ecoLife Basmati Rice according to package directions.
- When done, fluff with a fork.
- Let rice sit 4-5 minutes, then stir in all ingredients.
- Season with salt and pepper.
