Ingredients
- 1 tablespoon olive oil
- 1 small onion finely chopped
- 1 stalk celery finely chopped
- 1 bell pepper diced
- 2 cloves garlic minced
- 1 tablespoon chili powder
- 1 tablespoon cumin ground
- 2 teaspoons salt
- 1 teaspoon paprika
- 1 lb. beef ground
- 1 cup ecoLife® Red Lentils rinsed
- 1 can corn with liquid
- 1 can tomatoes crushed
- 1 can chili beans with liquid
- 2 cups water
- Sliced jalapeños to garnish
- Sour cream to garnish

Instructions
- In a large pot, heat olive oil over medium high. Once hot, add onion, celery, bell pepper and garlic. Cook until vegetables become tender. About 5 minutes.
- Add garlic, chili powder, cumin, salt, paprika and beef. Stir occasionally and cook until beef browns. About 10 minutes.
- Fold in lentils, corn, tomatoes and beans. Add water and simmer on high for 10 minutes. Serve with jalapeños and sour cream.
