- 1 cup ecoLife® Red Quinoa rinsed
- 2 cups water
- ¼ cup corn roasted
- ¼ cup garbanzo beans
- ¼ cup edamame beans
- 1 red pepper roasted
- ½ avocado peeled and sliced
- 2 tablespoons cilantro roughly chopped
- In a saucepan, bring water and quinoa to a boil. Reduce heat and simmer 12 minutes or until water is absorbed. Remove from heat and let rest covered for 5 minutes. Fluff with fork and let cool.
- In a small bowl, combine ingredients. Toss with favorite dressing and serve immediately.
