Ingredients
Salad
- 1 can black eyed peas
- 1 can black beans
- ½ cup roasted bell peppers diced
- ½ cup poblano peppers diced
- 1 cup halved grape tomatoes
- 2 stalks of diced celery
- 2 cups ecoLife® Quick Cook Brown Basmati Rice cooked
- Shredded jack cheese
- cilantro leaves
- Pickled jalapeño peppers
- Tortilla chips
Dressing
- ½ cup olive oil
- ¼ cup lime juice
- 2 tablespoons cilantro chopped
- 1 tablespoon hot sauce
- 2 cloves garlicminced
- 1 teaspoon chili powder
- ½ teaspoon cumin
- Salt and pepper

Instructions
- Cook Brown Basmati Rice according to package instructions and set aside.
- Mix all the ingredients for the dressing in a bowl. Let stand for 15 minutes.
- Mix together beans and peppers in a bowl. Add 1/2 the vinaigrette and microwave for 2 minutes. Taste and season accordingly.
- Divide rice, bean mixture, and tomatoes among four bowls. Garnish with cheese, celery, cilantro, jalapeños, and more dressing to taste. Serve with tortilla chips.
