Ingredients
- 2½ cups water
- 1 cup ecoLife Organic Freekeh
- 1 cup collard greens cleaned and thinly sliced
- 1 cup swiss chard cleaned and thinly sliced
- 1 cup Lacinato Kale cleaned and thinly sliced
- cup ¼parsley chopped
- 3 tablespoons sherry vinegar
- 3 tablespoons GrapeOIa Oil
- 1 teaspoon crushed red pepper
- 3 green onions thinly sliced
- ½ cup sliced almonds roasted
- Salt and pepper to taste

Instructions
- Bring 2 ½ cups of water and 1 cup of Freekeh with a pinch of salt to a boil in medium sauce pan. Cover and reduce heat to a simmer. Cook for 10 - 12 minutes or until water is absorbed. Set aside and let cool, about 20 minutes.
- Combine greens, parsley, vinegar, oil, and red pepper with a pinch of salt in a medium bowl. Toss and coat in the liquids. Add freekeh, onions, and almonds, and toss together. Add salt and pepper to taste.
