  1. Bring 2 ½ cups of water and 1 cup of Freekeh with a pinch of salt to a boil in medium sauce pan. Cover and reduce heat to a simmer. Cook for 10 - 12 minutes or until water is absorbed. Set aside and let cool, about 20 minutes.
  2. Combine greens, parsley, vinegar, oil, and red pepper with a pinch of salt in a medium bowl. Toss and coat in the liquids. Add freekeh, onions, and almonds, and toss together. Add salt and pepper to taste.
