Ingredients
Tahini Dressing
- 1/3 cup tahini
- 1 clove garlic minced
- 4 tablespoons lemon juice
- 1/3 cup hot water
- Salt and pepper to taste
Bowls Assembly
- 2 cups Cooked ecoLife Quick Cook Brown rice
- 1 english cucumber diced
- 1 pint cherry tomatoes halved
- 1/2 cup feta crumbled
- 4 cups baby spinach
- 1/4 cup sliced red onion

Instructions
- In a medium bowl, combine all the ingredients for the chickpea mix and set aside.
- Make the tahini dressing by whisking together all the ingredients. Add more water to thin the dressing to desired consistency. Season to taste with salt and pepper.
- Assemble bowls by dividing ecoLife Quick Cook Brown Rice, spinach leaves, cucumber, chickpeas, red onion, cherry tomatoes and feta among bowls.
- Drizzle with dressing and serve.
